My healthy green weekdays are back after a short Christmas break. Will be lots of yummy salads for dinner, and for lunch some soup. The colorful mix above consists of lightly blanched kale, sliced red cabbage, fennel and red cabbage (love my new mandolin) and corn. Add a little lime juice, sesame oil and coriander, then enjoy with a slice of tuna or just as it is.
