This omelette is a perfect mix of autumn: kabocha pumpkin, kale, parsley, green chili and tomatoes, all harvested from my garden. Beat 2 organic eggs and add some mushroom soy, white pepper and cayenne. Put a hint of oil and a knob of butter in a heated pan, fry the vegetables except for the tomatoes for about one minute before pouring the eggs over the mix and then let it it cook and firm up. When the edges are golden the omelette is ready. Serve with the tomatoes and eat directly from the pan! Enjoy!

glasnudlar / glass noodles
Blanda ner dem i marinaden. Skiva den färska vitkålen i väldigt tunna skivor med mandolinen, hacka sedan koriander, olika sorters mynta, vårlök och lite persilja i grova bitar som sedan strös över glasnudlarna. 10 minuter tar det att fixa middagen!
Super simple glass noodle salad with fresh cabbage, cilantro and mint
I am very fortunate to have a mother who runs an organic farm. This time of the year I fill the fridge with fresh vegetables that are bursting with energy. This noodle salad is very simple to do. Boil water (I use the kettle, so it takes only 1 minute) ) and pour over a portion of the dry glass noodles. Allow it to soak while you do the rest of the salad. Take equal parts of lemon or lime, mix with fish sauce (there's a version with oysters that are much milder and does not smell as strong as regular fish sauce), and add dry roasted thai chili. A few drops of sesame oil if desired, and lightly roasted sesame seeds. Drain the noodles when they've softened and cut them across once. Mix them into the marinade. Slice the fresh cabbage into very thin slices with a veggie mandolin, then chop coriander, different varieties of mint, spring onion and some parsley into coarse pieces and then sprinkle over the glass noodles. It doesn't take more than 10 minutes to fix dinner!
