choklad & hasselnötter / chocolate and hazelnut





Min kära mor fyllde år och jag ville hitta på något nytt till hennes födelsedag. Jag fann bland mina gamla kokböcker ett recept på en hasselnötskaka som såg god ut (naturligtvis gluten och laktosfri), blev inspirerad, gjorde om den och adderade mörk choklad, grädde och jordgubbar. Resultatet blev fantastiskt! 

Rör samman 3 ägg med 1,5 dl socker och 1 tsk bakpulver i en skål. Låt vila i 10 min så att sockret löser upp sig. Det är viktigt att man inte vispar smeten. Rör sedan ner 150 g malda hasselnötter. Häll ner smeten i en bröad springform (jag använder mandelmjöl), grädda i 175 grader i 35-40 min. 

Kakan kan sedan förvaras i kyl fram till ett par timmar innan servering.

Smält 180 g mörk choklad över vattenbad, rör i 5 msk vispgrädde eller mjölk och ett par klickar smör tills chokladen blir blank och tjock (smöret går att utesluta om du vill). Bred chokladen över tårtbotten och låt svalna. Vispa sedan 3 dl vispgrädde som du brer över strax innan servering, toppa med riven choklad och färska jordgubbar. Mums!

We celebrated my dear mum's birthday and I wanted to do something new for this special occasion. In one of my many old cookbooks, I found a recipe for a hazelnut cake that looked nice (of course gluten and lactose free) so I decided to make my own version and also added dark chocolate, whipped cream and strawberries. The result was amazing! 

Stir together 3 eggs, 1,5 dl sugar and 1 teaspoon of baking soda in a bowl. Let rest for 10 minutes so that the sugar dissolves. It is important not to whisk the batter. Then stir in 150 gram grounded hazelnuts. Pour the batter into a floured spring form (I use almond flour), bake at 175 degrees Celsius for 35-40 minutes. 

The cake can then be stored in the fridge until a few hours before serving. 

Melt 180g dark chocolate over a water bath, stir in 5 tablespoons whipping cream or milk and a couple of pats of butter (it's ok to exclude the butter) until the chocolate is smooth and thick. Spread the chocolate over the cake base and let cool. Whip 3 dl whipping cream and spread over just before serving, garnish with grated chocolate and fresh strawberries. Nom nom!

27th bathday



What a great birthday! I had the best company and got lots of wonderful presents. And thank you Elizabeth, for hinting to my boyfriend that the kid in me desperately wanted a birthday cake :) The day started with beautiful singing from Scott and then a swedish, more comical version by mum on the phone. Picked up the other gorgeous E at the station and we have been shopping and eating non stop since then! More pictures and stories to follow... bye bye now
